Out of 100 plus headspace settings I have never removed either one. What would either one do to inhibit the proper setting?
I have always taken out the ejector and extracter when head spacing But I read a thread on here the other day where a man left in the ejector. Can you get a proper head spacing with the ejector still in the bolt head? If so what about the extracter!

A gunsmith told me to take them out for safety! So he was wrong then?

Wrong is harsh. The fear, in my mind is accidental trigger function where the firing pin strikes the hard gauge. With the Savage three position safety you can lock the trigger and still operate the bolt. With that in mind lets work through your smiths cautionary statement.A gunsmith told me to take them out for safety! So he was wrong then?
If you leave the extractor in then the gun will....? If you leave the ejector in the gun will .....?
Did mine with both in and it works good. I can see why he'd say the ejector but I don't know about the extractor. Just make sure the extractor engages the case or the groove on the guage.
I've heard of removing the extractor before, but have never done it myself. And have never had a problem.
That's all Remington technology. Leave both of them in.

He works on remington almost exclusively so that makes a lot of sense to me thanks for the info nice not to have to take them out.
