I checked out Boyds, and they seem to have plenty of stocks for the new rifles with the bottom bolt release. But then I haven't checked anywhere else with the really fancy and expensive stocks.

A year or two ago, options were rather limited. I wouldn't call them "severely" limited now, by any stretch. Check around. I think you'll be pleasantly surprised.
