I would go to at least a 1/8 for the 105's and 107's. If you ever think you might want to go to 115's then 1/7. There are those that manage to get the 105's to stabilize in a 1/9 but it seems to be a shot in the dark.
I am planning on building or buying a 243 and I'd like to shoot 105 grain bullets. Is a 1-9 twist going to work or do I need a faster twist. You thoughts...

I'd agree.
There is no real downside to reserve twist.
Spin 'em quick and push 'em fast.
