But, can I swap the entire bolt between rifles (same action lengths)? If so, what about between an accutrigger and non-accutrigger models?

You can switch bolts but there is a problem, there may be a head space difference from bolt to bolt, this can cause a dangerous situation. You should check head space before firing.
When I had Fred T&T my action (22-250---- short) , I had him supply me with a complete 223 bolt. when I swap barrels, I swap bolts for the appropriate calibers.

I have 2 guns, one original 30-06, and one original 7mm Rmag. The magnum has the accutrigger, but if I just have to trade bolts, I can put a standard chambering on that action too.
