Marinated wrapped overnight.

Resting ... cooked in bacon fat (salt and pepper to taste).

Served with red wine, mango salsa, and sliced baby potatoes with bacon strips. The picture doesn't do justice as it is a lot bloodier. :p

Oh my. . .

Deer is great, but elk and caribou. . . NOW you're talkin'. Elk IMO is the king of game meats. Looks delicious.

The picture does it plenty of justice, BTW.
