I would like to build something like a 7WSM or .300WSM. Can I build these calibers on a short action Stevens 200? Will the mag work or do I need to go single shot? Anything else in the neighborhood of these calibers that you recommend that I can build on a short action?

You can build what ever you want. Change the mag box and follower, use the correct bolt head, screw on the barrel and go shoot. The WSM's will work in a short action. If you want to go with a single shot you can build a .338 Lapua Magnum if you want to but you would have to remove the bolt to get out the spent brass.

Do they make a different mag box and follower to support a 7WSM that will fit a Stevens 200 SA?

I built one on a Stevens long action 270 and just tweaked the lips slowly until it would feed properly 8) if you plan on building one on a short action you will have to change the firing pin as well as the bolt head

How about a .284 or 6.5x.284 will that work on a Stevens 200 short action without having to change the firing pin? The current bolt head is a .308 size.

Also 260 Remington (based on 308 case) will work with SA and be good to 1000+ yards. Almost up to the 7mm specs.

+1 on the 260. I built one on a Savage 10 SA DBM. Couldn't be happier with it. And I have had it on target at over 1100 yds. If you want to go the WSM route there is the 6.5WSM and it's a screamer.

Those would use the same firing pin yes
