I recently obtained a Model 1899 (built 1918-1919) that has been converted to a 219 Zipper. How do I determine the original caliber? The rotating magazine appears to be steel or aluminum, not brass.

The only two chamberings that are similar would be the .30-30 and .22 Savage High Power. The .22 HP and .219 are both based on the .30-30 case. Other than that, hard to tell. Do you know the model number??
Straight or pistol grip, takedown??

I don't know the model number. It has a pistol grip, but may be newer stock and forearm. Not a takedown. The only marking on the barrel is "219 ZIPPER".

Probably rebarreled from 22 HP or 30-30.
Pls post pics of rifle and all markings.
Does serial # under buttplate and on back of fore arm match that on action ?

There are no serial numbers under buttplate or on back of forearm, only under the receiver near the lever pivot. I am still working on posting photos.
Would the original 30-30 magazine carousel and slide mechanism have been used for the 219 zipper?

Yes! The original rotary mag would work with the .219 since it basically a necked down .30-30.
