In was cleaning the rifle and checking screws. So I unscrew the trigger screw and some plastic came out of it. When I screw it back in... It tightens up then keeps spinning, is this something I should worry about? If so, what do I have to replace to get this fixed?

Dont keep spinning it. The most rearward screw is a trigger guard screw and is only there to hold the trigger guard in and should only be snug. Over tightening it will surely strip it out.

you can repair the threads with epoxy or some other suitable filler.

You would not describe that as the metal screw acted as a conveyor and pulled the threads out much like over torquing bolts in aluminum.
I'm guessing NASA employee.:p

The plastic stock.

If it's the screw I'm thinking it is it's not threaded like a machine screw but more like a wood screw. Most likely there was a pilot hole in the stock and the screw was never intended to be anything more than snug. The MKII rimfire bottom metal has a similar set up on the bottom metal with one action (machine) screw and one screw into the wood or plastic depending on the model. Many people have stripped the hole by over tightening. The stripped hole can be fixed by inserting a piece of wooden tooth pick in the hole followed by the screw.
