Say I had a stock bolt in my rifle and then switched to something like the SSS or PTG fluted bolt body; would that require that I re-check and possibly adjust the headspacing?

What if I had 2 Savage rifles of the same action length and bolt face but maybe different caliber; could the bolts be used interchangeably?

No and no. Assuming you use the same bolthead on the first one you will be fine. Swaping complete bolts you should check headspace and may or may not need to adjust the headspace.

I've had bolt heads change headspace.

+1^^^. For safety sake, you need to recheck your headspace.

The bolt head itself along with the chamber depth in the barreled action set the headspacing for a gun. So a bolt head and barreled action should be headspaced together and used together. If the bolt head is moved from one barreled action to another the headspacing will have to be checked and adjusted if necessary.

The bolt body does not set or effect headspacing it simply guides the bolt head through the action and holds the firing ping/cocking mechanism.
