Can a wsm short action be adapted to anything other than a wsm/saum by changing bolt face?

Yup.
You'll probably need a LARGE shank barrel for your WSM action, but the world is your oyster with a bolt face.

Yes large shank. But not all cartridges will work in a short action correct?
I have two 270wsm and am trying to decide what other caliber i want, since i don't need two 270wsm's

Iam in the same predicament with a 300wsm; thinking about making it a push feed in a .260 next year. it is supposed to be a easy swap on bolt faces. bBTW what contour is your .270wsm barrel?

Yes it can. If you needed to extract a live round, you would have to take the bolt out. Other than that it will work fine.
