I see a lot of posts and pictures here about hunting feral pigs. What do you do with them? Do you eat them and if so how do you cook them. The only wild pig I've ever eaten was Russian Boar when I lived in California. It was tougher than shoe leather. Let's see some recipes here.

A friend of mine killed a whole mess of pigs on a ranch and gave me half a piglet. I smoked it at about 230 in a Weber kettle with charcoal and pecan wood for about 8, 9 hours. It looked like this:
Dry rub with salt, cracked pepper, brown sugar, paprika and chili powder.

Pulled. It was great naked or with a little suace.

Sauce recipe:
My house sauce is a bit Memphis if anything but not really any particular style. Tangy, rich with a bit of spice. It lends itself well to modification. I sometimes add Worcestershire, sub brown sugar for some white, more or less molasses....whatever floats your boat works well.
2 Cups Ketchup
.25 cup white sugar
.25 cup molasses
.5 cup cider vinegar
.5 cup dijon mustard
2 tspns chili powder
1 tspn smoked paprika
.5 tspn garlic powder
.5 tspn cracked pepper
.5 tspn cumin
1 tspn salt
2 tblspns olive oil

simmer 30 minutes

We make alot of sausage, sometimes fry the backstraps like porkchops, sometimes smoke them, hind quarters makes really good hams, my favorite is smoked ribs.

Thanks! Wild hogs' inherent toughness and propensity for parasites makes barbecuing a great option. It will make the meat fork tender and make it thoroughly safe to eat. And delicious.

And as mentioned the wild hogs make great sausages which you can also smoke.

Those legs look like they would make pretty good Smithfield type country hams. What about the parasites? Are they a big problem?

No not really. Just like any pork, it can come with things like trichinosis so you want to make sure it is cooked through.
